View Full Version : Wild Yeast

I am wanting to grab some wild yeast and do some brewing with it. I picked up some third runnings from my last batch and have it sitting outside with cheese cloth over it. It is a similar method to how my wife makes her sourdough bread. I have read that the beer yeast kicks in about 2 weeks into this process. Is that right?

Also, I was planning on making a few short batches because my readings say that the first couple of batches take a little bit for the wild yeast to fully come into its own.

Really depends on the yeast "strains". some of the wild yeasts that you find in lambics take 18 months to 24 months to really do their thing.

I have inadvertently made a beer with wild yeast. I had a bad seal on a keg and it got infected. It pissed me off and I just resealed the keg and put it off to the side and forgot about it. About a year later I cleaned out the keg and it had some mold growing on the seal so I started dumping the beer and just for grins I tasted it and it was awesome. Then I was really pissed as it was almost all down the drain.
