Here is the recipe for the Raspberry Lambic Ice Cream that was served at the beer dinner. Enjoy.


Raspberry Lambic Ice Cream

12 ounces Frozen Raspberries
1/2 cup Sugar
1 cup Lindemans Framboise
1 envelope Unflavored gelatin, soften in 3 tablespoons warm water
1 cup Heavy Whipping Cream
1/2 cup Vanilla Syrup (made with real cane sugar)

1. Thaw frozen raspberries and blend in a blender until a thick sauce.
2. Press raspberries through a fine metal strainer to remove seeds.
3. Blend the seeded raspberries with the sugar, cream, lambic and vanilla syrup
and softened gelatin in a blender.
4. Pour into ice cream machine and freeze (will still be soft).
5. Put into freezer and let it freeze overnight.

What kind of ice cream machine do you own?

I have one of the small ice cream makers that has the gel filled tub. You put the tub in the freezer and do not have to use the ice and salt. But for the dinner I borrowed a traditional larger maker where you use the ice and salt since I did not want to have to go through 4 batches with the little one.
