12 oz. Pilsner
12 oz. Wheat

seep 45min @155 degrees in 1gallon of water
Sparge with 155 degrees, 1gallon of water

bring to boil, remove from heat

add 7.5lb Wheat LME, stir in, return to boil (I ended up using 4lb DME and 3lb 6oz LME because I bought the last bulk Wheat LME they had), which put me over 1.06


add 1oz Cascade
Boil 60min

OG 1.062
FG 1.013
6.34% ABV

Pitched 11.5g Dry, Wheat Beer Yeast (E941) at 75 degrees

FG of 1.013 on day 7 and 8, racked to keg to carb and condition until the party on June 1st.

I will be bringing a half galon of this to the meeting on tuesday asuming i can find a cooler to fill with ice to keep it cold in my car for 10 hours while I am at work. Hopefully someone there can celp me place this into a proper category.

One of my best brews to date....

hmmm. I have never used the E941 dry yeast before. Does it produce bananna and clove flavors and aromas?

I don't recall it is a Wheat yeast, not a Hefewizen yeast. I will need to taste another pint tonight... I enjoyed the 1 pint i pulled last night so much i didn't really pay attention to anything other than the overall taste. I would have expected more banana/clove flavor seeing as this fermented at 74degrees.

The fact that this went from boil to my drinking glass in 15 days, and tasted pretty danmed good was the thing that really made me smile.

Yeah, that is the great thing about wheat beers. They are ready to drink quickly. Look forward to tasting it at the meeting.

Mike Wedge clasified this as a dunkleweizen, so i changed the name on the brewblog recipe list.

It has been a hit everywhere I have served it. I will definatley make this one again!
