2 questions.

How long will hops stay good in there sealed packages if they're in the freezer?

I have 1oz. cascade, about 2 oz. of fuggle and 1 oz. of target. Could I use any of these to make a hefeweizen?

Hefe's don't need much hops. I would do two hoppings, bitter at 60 with some of the Target and aroma with the cascade. No flavor hoppings.

If they are pellet hops? Vacuum sealed, kept in freezer they should be good for a year or two, especially if you are just using them for bittering.

Hefe generally just has bittering hops, so any of those would be fine. Back when we had an excess supply of Simcoe we used to it to bitter big brew batches (yes even the german beers).

As Nick said, sealed and in the freezer they will last a long time.
Buy by the pound and save.
if you don't have a vacuum sealer, get a roll of bags, a couple of belgian beers and come over to the house.

Bags are only slightly more expensive than the regular ones, and they seal quite well. I bought it for repacking meat in bulk, but use it for hops, as well as beef jerky.

Quart and Gallon size bags available.
Pump was $11
quart bags are about $.6 each.

i've used cascade to bitter a hefe. a little light, but not bad
