Steep Grains at 165 `F for 30 mins
(.33 Kg. Crystal Malt 40L)
(.33 Kg. Vienna Malt)
(.23 Kg. Biscuit Malt)
Sparge with most primitive methodology
Bring near boil add:
2Kg Pale Malt Extract
1Kg Light Malt Extract
.5 Kg Light DME
at boil add: 42 grams Styrian Goldings 5.3%AA pellets
at 20 mins. add: 14 gms Styrian Goldings 5.3%AA pellets
at 45 mins. add: 28 grams Herbrucker Hallertauer 4.6% AA plugs
at 50 mins. add: 1/2 tsp irish moss
Knock Out at 62 mins. Cool down in 30 mins to 67 `F OG = 1054
Pitch 500ML. starter of Wyeast 2308, attach air lock to 26 Lt. glass
ferment for 7 days at 45 `F, rack to 2ndary glass for 57 days at 42`F
bottle on 4/7/00 w/ 42 oz. speise collected before pitching yeast
