Sierra Nevada Celebration Ale Clone
Ingredient List:
10 lbs American 2-row
2 lbs American Crystal Malt 20L
1 lbs Cara-Pils
4 oz Malto-dextrine
1 oz Chinook
1.25 oz Cascade
0.75 oz Centennial
1 tsp irish moss
White Labs California Ale V Yeast - pitchable
Brewing:
Single Infusion Mash: All grains in 4 gallons of water at 153 degrees for 75 minutes.
Recirculate wort through grainbed until running clear.
Sparged with 4 gallons of 170 degree water for a total boil of around 6 gallons.
Brought to a boil and added malto dextrin and .75 oz of Chinook after the hot break.
At 30 minutes added .25 oz of Chinook and .25 oz of the Cascade.
At 50 minutes added .5 oz of Cascade and irish moss.
At 65 minutes added .5 oz of Cascade and .5 oz of Centennial and cut heat.
Let steep for 5 minutes then chilled wort through a counterflow chiller.
Aerated wort using aeration stone and pitched yeast at around 75 degrees.
Dry hopped in keg with .25oz Cascade and .25oz Centennial whole hops
O.G. of around 1.062, F.G. of 1.012
