Default Racking to a fruity secondary

I brewed 10 gallon wheat 5 days ago. ... I want to rack onto frozen cherries and I wanna know should I wait at least 7 to 10 days before i rack on the cherries? I did a batch where i racked onto frozen raspberries after 7 days and it was really strong but I know raspberries are a lot more potent than cherry so I didn't know if it was better while I was still in somewhat active fermentation to go ahead and rack onto frozen cherries or wait until active fermentation is complete then rack onto the cherries? i want to impart as much cherry flavor as I can and yes I know you can use extract. .. I used extract once before and it didn't work at all.

There are lots of methods here. generally, the later in process that you add the fruit, the stronger the flavor.

Still adding fruit to perfectly good recipes i see.

Its for my wife and yes i am :-p but now that you mention it i may leave the 4 gallon carboy as regular

here is my process

1: brew a beer
2: ferment it for 2 weeks (all that matters is that fermentation is completed)
3: freeze fresh berries overnight
4: put the fruit into a sanitized carboy
5: rack the beer to the carboy
6: leave it till the fruit turns white (I have only used raspberries, takes about 4 days)
7: keg or bottle as normal

Ok thanks...When I did my raspberries I primary for 1 week then Racked onto frozen berries for 1 week but yes they were white.

Stubby has cherry purée especially for beer/wine.

3 options
1: who cares, you are tossing in alcihol in a moment anyways
2: buy the puree stuff, or something like that, that is pasturized before packaging
3: I believe (do not quote me here) you can put them in water and add a camden tablet, or somethign of that nature.

If using cherries, you probably want them cut in half or something like that.

I have never done anything o sanitize raspberries, and have never had any problems.

If I were to use cherries, I would probably mix some starsan, and toss them in for a bath, then into the food processor to chunk them up a bit.
